I think one modus operandi is to breach and download/erase the ENTIRE software/data from an entity (probably on a weekend), and then notify the entity: “pay us x-amount of Bitcoin, in order to get your data back.” it may be done in tranches: 30% payment for 30% return of data – because neither side trusts the other.
